Culinary Arts: a college objective

Your love of food and cooking may have led you to seek training for a career in the culinary arts. The first step is to focus on your own goals. You might be thinking big and imagining yourself as the next celebrity culinary restaurant magnate but then again you could just be looking to pick up a few skills to improve your cooking at home.Cooking schools and culinary institutes share the same expectations and function with the same objectives in mind. Just as each student attending the culinary schools is unique to himself but still shares the love of cooking with all the other students, each culinary school is unique to itself, but still shares the same goals in teaching you with all the other schools.

Most programs that are being offered by the various cooking schools have culinary arts objectives geared towards entry-level food service employees. Anyone who wants to study the culinary arts needs this training.

In recent years, the culinary arts profession has seen an increase in popularity. An increasing amount of people have more interest in earning a formal education in the area of cooking, with the desire to start a better career upon completion. As a result, culinary institutes are becoming more selective, requiring you to be interviewed and undergo exams before you even enter the program. One of the objectives of the culinary arts program is to offer continuous training to students having deep interest and skills in this course.

Students taking these programs will enjoy internships at a variety of top restaurants. According to the school’s beliefs, pupils will learn their biggest lessons from the experiences that they get in a real-life environment.

Fiesta Tuna Potato Casserole

A kid friendly meal, sure to meet with thumbs-up approval! Great for potlucks and kid parties too. An excellent source of Vitamins B6, B12 and D

Ingredients

2 (2) cooked baking potatoes
2 cans (170 g each) Clover Leaf Chunk White Tuna, drained
1/2 cup (125 mL) each chopped green onion and corn kernels
2 cups (500 mL) mild salsa
1 cup (250 mL) shredded Cheddar cheese
sour cream (optional)

Instructions

Preheat the oven to 350 F (180 C). Cut the potatoes into 1/2-in (1 cm) cubes, leaving the skin on. Stir the potatoes gently with the tuna, green onion, corn, and salsa. Scrape into a 7 x 11-inch (2 L) casserole.

Sprinkle evenly with the cheese and transfer to the oven. Bake for 25 minutes or until the casserole is bubbly and the cheese is melted. Serve with sour cream, if using. Makes 4 servings.

A Simple Meat Rub You Can Make Yourself

You may have noticed a wide variety of “dry rubs” available at grocery
stores and specialty food stores lately. These fragrant combinations of
herbs and spices add texture, color, and, of course, flavor to everything
from steaks to chicken. Sometimes though, the commercial rubs are very
salty and many contain MSG, which may give some people a headache.
So why not try to make your own dry rubs with whatever herbs and
spices you have in your pantry or spice rack?

Try this basic rub which is enough for about 10 steaks.

Basic Steak Rub

1 tsp. chili powder

1 tsp. salt

1 tsp. garlic powder

2 tsp. paprika

3 tsp. cinnamon

4 tsp. brown sugar

2 tsp. oregano

3 tsp. ground cumin

Combine the ingredients in a large, shallow baking dish. Place one
steak in the dish and gently pat it down to coat the bottom side of the
meat with the rub. Flip the steak over to coat the other side. Gently rub
the mixture into both sides of the meat.

Repeat the process for each steak. Let the steak rest for about an hour
or so, coated with the rub, then grill as usual once the steaks are at room
temperature.

NOTE: Throw away any of the leftover rub that came into contact with the
raw meat.

Serving the Steaks: Serve steaks without steak sauce since it will
overpower the rub and you will only taste the steak sauce.

OTHER HERBS & SPICES TO TRY IN RUBS:

Marjoram, basil, thyme, rosemary, oregano, lemon pepper, dry mustard,
celery salt, red pepper flakes, Chipotle powder, etc. - experiment until
you get just the right combination of ingredients for your version of the
perfect rub.
