A kid friendly meal, sure to meet with thumbs-up approval! Great for potlucks and kid parties too. An excellent source of Vitamins B6, B12 and D
Ingredients
| 2 | (2) | cooked baking potatoes |
| 2 cans | (170 g each) | Clover Leaf Chunk White Tuna, drained |
| 1/2 cup | (125 mL) | each chopped green onion and corn kernels |
| 2 cups | (500 mL) | mild salsa |
| 1 cup | (250 mL) | shredded Cheddar cheese |
| sour cream (optional) |
Instructions
Preheat the oven to 350 F (180 C). Cut the potatoes into 1/2-in (1 cm) cubes, leaving the skin on. Stir the potatoes gently with the tuna, green onion, corn, and salsa. Scrape into a 7 x 11-inch (2 L) casserole.
Sprinkle evenly with the cheese and transfer to the oven. Bake for 25 minutes or until the casserole is bubbly and the cheese is melted. Serve with sour cream, if using. Makes 4 servings.
